Listen. I know mornings can get crazy! The mornings that I have to be at work at 7 am; I have a 45minute- hour commute, and I have to look presentable…. That’s rough. That first alarm clock going off at 4:30a is no fun, and I’m honestly not interested in making us a 10 step breakfast that early.

When we wake up and eat breakfast, (breaking our fast; break-fast), we have the option to fuel our bodies with the nutrients it needs to get through the day, or literally sign ourselves up for sugar crash, after sugar crash, after sugar crash. And bless those babies going to school those early mornings with only sugar on their bellies. By the time they get to school and we get to work, we’re so tired. A good meal in the morning is one that incorporates protein and healthy fats, in addition to a fruit or veggie. So eggs, avocado, nuts, etc. paired with mango, strawberries, raspberries, broccoli, tomato, etc.

You could be questioning in your mind, “but fruit has sugar!” Yes, it does! But when we get sugar from fruit, our body breaks it down differently and slower than refined sugars. The fiber that comes with it causes our bodies to absorb it much slower. In addition, when you eat a piece of fruit you’re getting antioxidants, minerals, and vitamins that reduce inflammation and lower your risk for health issues and diseases that added sugars contribute to.

Toast is something so easy, and those 4:30am wake up calls aren’t going to put you in immediate misery thinking about feeding yourself and your kiddos. Growing up, I had toast for breakfast, but it was the typical American breakfast… might as well call it dessert, honestly. Toast with butter, cinnamon, and sugar! Now don’t get me wrong! That compilation is TASTEY! And bless my momma for also being a working mother and having breakfast sitting on the table every morning waiting for my brother and I. I appreciate her and the tireless work she put in. But my hope is to help you come up with other options for your family so you can get your day started on the right foot.


Avocado Toast

Ingredients:

  • Avocado (Make sure it’s ripe. Should be tender to the touch. Not rock hard)
  • Sliced bread
  • Salt
  • Pepper

Steps:

  1. Cut the avocado in half – run a knife around the avocado length-wise and twist the two halves.
  2. Scoop out the avocado and place in bowl
  3. Simply mash the avocado with a fork. (I personally like mine mushy and not clumpy)
  4. Add salt and pepper to taste.
  5. Spread on toasted bread.
  6. Option: place diced tomatoes, onions, a little squeeze of lemon, or place an egg on top.

Nut Butter Toast

Ingredients:

  • Almond butter spread or Peanut butter
  • Sliced bread
  • Blueberries or a berry medley (I prefer frozen. They don’t ruin as quick. It’s picked before it’s ripe, for easier transportation but also can be flavorful and in some cases more nutrient dense.)

Steps:

  1. Defrost the amount of fruit you would like to use.
  2. Spread nut butter on toasted bread.
  3. Slice fruit into small pieces. (Almost looking like a jam)
  4. Place on top of toast.

Strawberry Toast

Ingredients:

  • Strawberries (again I prefer frozen. As well as the ones that come pre-sliced)
  • Yogurt (I prefer Fage brand. It has zero added sugar. Stonyfeild has organic sugar)
  • Sliced bread

Steps:

  1. Defrost the amount of strawberries you would like to use.
  2. Slice strawberries into small pieces (almost looking like a jam)
  3. Spread yogurt on top of toast bread
  4. Spread cut strawberries on top.
  5. Option: you can spread nut butter underneath the yogurt. (Before step 3)
