In honor of this week being my baby girls FIRST BIRTHDAY, and her birthday party theme of Annie’s Apple Orchard, I figured I’d go along with the theme on here! This weeks post is all about Apple recipes!

  • Apple Cinnamon Oat Muffin

Recipes

Roasted Apples

Ingredients:

  • 1 apple
  • 1 teaspoon avocado or olive oil
  • 1/4 tsp cinnamon
  • 1/8 tsp cardamon (optional)

Steps:

  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper (I prefer non white; it’s not bleached).
  2. Place apple slices in bowl. Add oil, cinnamon, and cardamom, and toss until it’s well distributed on apples.
  3. Place apple slices on prepared pan. Bake until tender, for 30 minutes.
  4. Cool and serve. I like to serve with yogurt or or oatmeal.

Apple fritters pancake

Ingredients:

  • 1 cup oat flour
  • 1 egg
  • 1/4 avocado oil
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup apple sauce
  • 1 medium apple shredded
  • 1 cup shredded apple
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • Milk to liking of consistency
  • Additional toppings: (optional) favorite fruit, maple syrup.

Steps:

  1. Mix all ingredients together in a mixing bowl.
  2. Pour over grease pan or griddle.
  3. Flip over once ready.
  4. Add optional toppings

Apple-Cinnamon Oat Muffin

Ingredients:

  • 1/4 cup oat bran
  • 1 cup whole wheat flour
  • 1 cup unbleached all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped and pitting dates
  • 1/4 cup hot water
  • 1/2 cup olive oil
  • 1 cup geeek yogurt
  • 1 egg
  • 1 egg yolk
  • 1 medium apple, chopped
  • 2 tbsp rolled oats
  • Cooking spray (I prefer Simple Truth Avocado spray)

Steps:

  1. Preheat the oven 375 degrees. Coat the muffin tin with cooking spray.
  2. Mix together oat bran, whole wheat flour, all purpose flour, baking powder, baking soda, salt, and cinnamon.
  3. Place dates and hot water into small bowl. Mash and mix with a fork until pasty. It’s ok to have chunks.
  4. In a separate bowel, whisk together date mixture, olive oil, egg, egg yolk, and Greek yogurt.
  5. Gently fold the dry ingredients into the wet ingredients being careful to not over mix. Gently fold in the apples, making sure to evenly distribute throughout the batter.
  6. Scoop 1/4 cup of batter in each muffin tin. Evenly sprinkle each muffin with rolled oats. (Optional)
  7. Bake about 20 minutes or until the muffins are golden brown.
  8. Allow muffins to cool 5 minutes before placing on a wire rack to cool an additional 10 minutes.
