- 1 cup unbleached all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped and pitting dates
- 1/4 cup hot water
- 1/2 cup olive oil
- 1 cup geeek yogurt
- 1 egg
- 1 egg yolk
- 1 medium apple, chopped
- 2 tbsp rolled oats
- Cooking spray (I prefer Simple Truth Avocado spray)
Steps:
- Preheat the oven 375 degrees. Coat the muffin tin with cooking spray.
- Mix together oat bran, whole wheat flour, all purpose flour, baking powder, baking soda, salt, and cinnamon.
- Place dates and hot water into small bowl. Mash and mix with a fork until pasty. It’s ok to have chunks.
- In a separate bowel, whisk together date mixture, olive oil, egg, egg yolk, and Greek yogurt.
- Gently fold the dry ingredients into the wet ingredients being careful to not over mix. Gently fold in the apples, making sure to evenly distribute throughout the batter.
- Scoop 1/4 cup of batter in each muffin tin. Evenly sprinkle each muffin with rolled oats. (Optional)
- Bake about 20 minutes or until the muffins are golden brown.
- Allow muffins to cool 5 minutes before placing on a wire rack to cool an additional 10 minutes.
