Smash Cake: Sugar Free


If you’re like me and waiting on giving your little one sugar, it’s almost impossible to find something that is truly sugar free. There’s so many different names of ingredients out there that is sugar, or a sugar substitute. In many cases, the substitute is worse than actual sugar. With Annies first birthday, I wanted to make sure she had a smash cake that was yummy, nutritional, and no sugar.

Her theme was “Annies Apple Orchard,” so it was rather easy coming up with a flavor.


Cake Recipe

Ingredients:

  • 2/3 cup apple sauce
  • 1/4 cup of yogurt
  • 1/2 cup coconut water
  • 3 eggs, beaten
  • 1 cup shredded apple
  • 1 tsp vanilla extract
  • 1 1/2 cup whole wheat flour (you can use I bleached all purpose flour too)
  • 3/4 cup almond meal
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon

Steps:

  1. Preheat oven to 350
  2. Mix apple sauce , yogurt, coconut water, eggs, shredded apple, and vanilla extract.
  3. In a separate bowl, mix together other ingredients.
  4. Add the dry ingredients to the wet, mix well.
  5. Pour into 2 8” circle cake tins. Spread until even. (Mixture is different consistency so don’t freak out. Lol)
  6. Bake for 15-20 minutes. I checked at 15 first.
  7. Take out of the oven and let sit to cool down for icing.

Icing Recipe

Ingredients:

  • 1 cup ricotta cheese
  • 8 oz. cream cheese
  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Steps:

  1. Place all ingredients into a bowl
  2. Blend on high with a mixer, until mixture is a smooth consistency.
  3. Spread on cake.
  4. Keep refrigerated until ready to eat.
