Pumpkin: The Taste of Fall

Part TWO: Pumpkin pancakes!

This week continuing with the pumpkin theme, it’s pancakes! Who doesn’t like pumpkin?! It’s a staple, necessity, must-have in fall weather! All the food, scents, outfits, and decor… it’s puts me in the mood! Speaking from a girl who absolutely LOVES summer, I do love my pumpkin stuff. It’s my pre-gamer to the holidays.

With this recipe, it’s a little different than my others. Sugar is mentioned, but you do have the option to omit it! With Annie just 13 months, we are still choosing not to let her partake in refined sugars, and will continue to do so until at least 2 years old or until we are comfortable; but of course in moderation when we do!


Ingredients
  • 1 cup oat flour
  • 1 egg
  • Spray oil (recommend avocado or olive oil)
  • 1/3 cup avocado oil (olive oil or vegetable oil are also options. We don’t use vegetable oil though because it causes inflammation.)
  • 1/2 tbsp baking powder
  • 1 1/2 tbsp coconut sugar (can omit)
  • 1/2 tsp sea salt
  • Whole milk (to consistency that you like)
  • 1 tsp vanilla
  • 1/2 pumpkin puree
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
Steps
  1. Wisk all ingredients together.
  2. Pour over sprayed griddle or pan.
  3. Flip over once ready
  4. Optional: add additional toppings. Ie. Favorite fruit, maple syrup, honey, yogurt. (I sometime mix cinnamon in her yogurt too)
